    Wedding & Events Manager

    Danielle has over 15 years of Weddings & Event experience and delivers a high level of personalised customer care.

    From the moment you fall in love with The Pheasantry Brewery you will have access to Danielle, our experienced, professional Wedding Planner who will assist you during the planning process and be on hand managing the Pheasantry team throughout your day. With her attention to detail and calm personality she will ensure your wedding will be stress free, enjoyable and memorable for all the right reasons.

    Danielle can also offer a large selection of handpicked local suppliers to provide any additional services you may be looking for to help make your special day

  • Julie Sobey

    Head Chef

    Julie, our chef for over 22 years, has worked her way up through the ranks to now hold the position of Head Chef/Manager. She is the perfect person to discuss the best options of food choice and always up for a challenge. Julie will take on board your ideas to help create a menu that reflects your tastes including recently creating a Japanese Wedding menu, producing authentic Japanese food for a Bride, Groom and all their guests, as they were engaged in Japan!
    Although rarely seen, Julie is a very friendly and approachable character who enjoys seeing all our guests have a great time and enjoy the best food possible.

  • Dominique Emmans

    Founder

    Dominique brings a wealth of management experience to the Pheasantry having started his training as a chef in France at catering college and then a French Hotel. Along with this he has worked in a 2 Michelin Star Restaurant at The Dorchester Hotel and finished his employed career as a Head Waiter at The Four Seasons ‘Inn on the Park’ in London.
    Alongside this he had an eclectic mix of training from Conference & Banqueting Manager, Pub Management to Catering College Lecturer. For the past 20+ years he has run a successful events catering business . This collection of skills can be called upon to provide highly customisable experiences to make your wedding or event totally unique.

..AND SO THE JOURNEY CONTINUES

In 2012 we converted the original farm buildings here into a modern micro brewery. The brewery’s name is derived from the cottage next to the brewery which original maps show was a Pheasantry used for breeding and rearing game birds.

Our beers are brewed using traditional methods, from malted barley, hops, water and yeast. This area of Nottinghamshire was an important hop growing region for around 150 years from the early 18th century, when nearby Tuxford had its own Hop Fair. The farm sale details from 1943 show that the field down from the restaurant was called the Hopyard, and there are hops growing wild in the hedges there today. High Brecks farm was owned from the late 17th century by the Kirke family who lived in the hall in East Markham. There was a brew house within the original buildings here which was used for John Kirke’s personal use.

Malting barley is grown on the farm today, and new hops have been planted for demonstration purposes, so that visitors can see the brewing process from beginning to end, and taste the finished product too!

My family have farmed in this area of Nottinghamshire for generations, growing cereals, vegetables and sugar beet. My grandfather, Joseph Camm, moved to Babworth in 1916 where he farmed and lived until his death in 1959. The business was continued and expanded by my parents, Frank and Margaret Morrell (nee Camm). Today it is still a family farming business with my sister and I responsible for day to day operations. We have found records showing that High Brecks Farm had a brewery in the late 17th century, so we are proud to be restoring the tradition of brewing to the farm.
